American TV channel CNN has compiled a list of the twenty most delicious soups in the world, which includes borscht - one of the dishes of traditional Ukrainian cuisine. In compiling the top twenty delicious first courses, the channel's website borrowed the culinary experience of Janet Clarkson, author of the book "Soup: A Global History."
"Chunks of tender beets swim in brilliant red broth for a soup that's beloved in Ukraine and across Eastern Europe. Often topped with a rich dollop of sour cream, borscht is anything but basic beet soup. It gets a tangy kick from kvass, a lacto-fermented beet juice that's another regional specialty," this is how American journalists describe borscht.
In addition to it, according to CNN, the twenty best soups in the world also include Nigerian Banga, bouillabaisse from France, Caldo Verde from Portugal, Peruvian shrimp soup, Spanish gazpacho, West African groundnut soup, American gumbo, Moroccan harira, Georgian kharcho, chorba frik popular in Algeria, Libya and Tunisia, and others.
Meanwhile, the culture of cooking of borscht will enter the list of the intangible cultural heritage of Ukraine as the Ministry of Culture and Information Policy of Ukraine reported on Facebook.
It is recommended to include five elements in the National list of intangible cultural heritage, including the Culture of cooking of borscht.
“It is the important step within the preparation of the nomination of the culture of borscht’s cooking in the Represented list of the intangible cultural heritage of UNESCO,” the ministry said.
